Caroline’s Salsa Recipe

I thought you might enjoy this recipe I created. It’s delicious!

10 lbs of ripe organic tomatoes
2 bunches cilantro
1 bunch green onions
1 red onion
4 ears of corn, kernels shaved off the cob
10 cloves organic garlic
2 jalapeño peppers
1 green pepper
2 small zucchinis
2/3 Cup vinegar
1/2 C salt
2/3 C sugar
2 limes, zest and juice
3 big handfuls of fresh basil

Chop all the veggies and fresh herbs, smaller for smoother salsa, bigger for chunky salsa.
Cook on medium-high heat for 15-20 mins until veggies are soft and peppers are a dull green.
Fill quart jars and process in a boiling water bath for 5-10 mins until jars are sealed and shelf stable.
